It's true. There really is a Vegetable and Fruit Improvement Center at Texas A&M. Here I was thinking that carrots were perfectly good vegetables, without need for improvement - how wrong I was.It seems the shining achievement of the VFIC so far is the "beta sweet" carrot. It's maroon:
They're also working on spinach, which is good, because apparently it's fighting back and trying to kill us with its friend e. coli. Viva La Veggie!
